Halloumi Salad

Halloumi cheese is originated in Cyprus, and has been traditionally prepared with cow, goat or sheep milk. It has an unusual feature of not melting when heated, and for this reason can be grilled or fried. Halloumi cheese is a good source of protein, 6g protein per 1 oz (approximately 28g), and has slightly higher sodium content than any other cheese, 3g of sodium per 100g.

It was my first time trying this cheese, and I surprisingly loved it so much that I looked for other recipies with halloumi cheese to try out for a later occasion. This cheese tastes fantastic, and is a good replacement to feta cheese if you would like some variation. I would describe its taste as mild, with a hint of matureness. You should definetely try it, if you haven't already!

Preparation time: 10 minutes

Ingredients: * trio salad (lollo rosso, lollo biondo, oak leaf)

* cherry tomatoes (cut in boats)

* cucumber (cut in cubes) * halloumi cheese (cut in cubes)

* chickpeas

* red onion (chopped)

* red sweet pepper (chopped)

* olive oil

* salt

This salad tasted delicious! Great to have as a big lunch. I became very full.
