For those who know me well or have lived with me at some point, know that I am enthusiastic about trying out new recipes and I like eating healthy. With my passion in cooking healthy dishes, you will find weekly updates on my most favorable meals. Every Monday on my blog!

I remember when I first came to Manchester to study at the University in 2014, I was constantly hearing my friends tell other people that I always cook from the scratch and eat very healthy. For me, it wasn't a choice, but rather a lifestyle I had developed throughout my high school years. The habit of eating healthy came from my inspirational sister. She was the first one in my family who introduced healthy meals in our diets. When I asked her where she got her inspiration to start eating healthy, she replied that it was something she was taught at school. In fact, the Norwegian schools do teach children about healthy dietary. When I was in 9th grade, I had a module in health and diet, where we prepared different meals on a weekly basis. It was one of my favorite subjects!

Nowadays, I eat a lot of vegetables, I love fruits and berries, my favorite fish is salmon, I consume meat or chicken on a weekly basis, and I enjoy eating different types of nuts. The reason I said that eating healthy is not a choice for me anymore, is because eating unhealthy makes me feel ill; I become so ill, unenergetic, my stomach hurts and I feel laziness. In other words, eating relatively different from what I am used to, is not a choice I can make anymore. It is more as a wish for me to avoid eating sugary crap and bad fatty acids.

Of course, I have days where I consume chocolate, icecream or a cake, but when I do so, I do it in small portions. A healthy diet doesn't only include antioxidants, mono- and polyunsaturated fats, proteins, vitamins and minerals. It should also include moderate amounts of carbohydrates and small amounts of sugar. Whilst, saturated fats should always be avoided.

Sometimes, a human body can benefit from eating a chocolate (preferrably dark chocolate because it is a powerful source of antioxidants). The darker chocolate, the higher cocoa content - the better health benefits it has. With moderate amounts of sugar from pastries, icecream, or candy, our body regulates the sugar levels. We should include some sugar in our diet, but it should never substitute another meal, especially breakfast, as that is in fact the most important meal of the day. You may wonder why? Because, breakfast provides the body and brain with fuel after an overnight fast. But when substituting breakfast with sugary products, the energy levels increases rapidly, and falls very quickly down again. The aim of eating breakfast will therefore disappear, as it won't provide the important nutrients a body needs to start of a new day!
